Extra cherry and star anise jam 160 gr 33 30
San Giovanni Montebello, a hamlet squeezed between the grandeur of the volcano and the blue of the Ionian Sea, is the area of origin of the cherries, which we work by hand for this jam. After having carefully chosen the best fruit, we add the quantity of star anise which allows us to move in the narrow corridor of pleasantness where character and balance meet. The fleshy sweetness of the cherries alternates continuously with the freshness of the anise, in a long gustatory game that gives pleasure even in the simplest combinations. Excellent accompaniment to baked hams, porchetta and medium and long-aged cheeses. If used to complement red meats, it becomes a pillar on which to build an impressive gustatory architecture made up of territorial references, combining the food with the cherry notes of a Sicilian Nero d'Avola.
Ingredients: cherries, cane sugar, lemon juice, star anise (0.1%). Gelling agent: fruit pectin. Fruit used: 65 g per 100 g.
