The tuna lattume, is a typical fish product used as an ingredient in the kitchen ... Typical of Sicily, it is the male equivalent of bottarga. It is obtained from the gonads and it is necessary to catch male fish during the breeding season. In other words, the sacs of seminal fluid must be as full as possible; they are taken, cleaned, boiled in water and salt and then cooled. At this point the lattume is drained and stored in glass jars with olive oil. Its natural and genuine flavor gives your dishes a Mediterranean touch. Excellent for seasoning hot or cold pasta-based first courses, but also for unique fish-based dishes and fresh salads.
