The ancient whole wheat Russello or Rossello is a variety of wheat typical of Sicily. It is an ancient grain grown in organic farming, in arid lands in the hinterland of the provinces of Agrigento, Caltanissetta, Palermo, Ragusa and Trapani.
Together with Timilia wheat, it is among the best-known ancient Sicilian grains. Russello organic wholemeal semolina flour, in addition to being rich in fiber and proteins, is also very digestible. In fact, it has a low glycemic index, thanks also to the natural cultivation without chemical fertilizers.
