Organoleptic notes
Appearance: dark color and medium viscosity given by dried grapes.
Smell: intense and characteristic aromas of berries, dried grapes and caramel.
Palate: sweet and sour flavor well bound in which contains the aromas of the wood from the barrels.
Recommendations for use
There are multiple uses for this condiment: from dips to raw vegetables, ratatouille, fancy salads, cheeses and cured meats as an aperitif. Ideal with gravies and sauces for lean roasts, stews and stewed red meats. Enrichs omelettes.
The use of drops of seasoning on flakes of Parmigiano Reggiano is refined.
Storage
Store in a cool, dry place. To be consumed preferably within 10 years.
