Pachino cherry tomatoes, rightly famous for their taste. Collected in summer, when the sun naturally ripens them. We preserve them, just as naturally, using brown sugar and lemon juice, to have them available all year round. The versatility of the tomato, with a concentrated taste and delicately innervated by acidity and sweetness, enhances the flavors of the grilled vegetables, towards which it extends a bridge thanks to the common slightly smoky notes. But it manages to give flavor to any preparation, even when used in a pan to finish white meat or game. Or with Cantabrian anchovies, Belice vastedda, oregano and oil, in a gourmet reinterpretation of the typical Trapani cunzatu bread. Ingredients: tomatoes, cane sugar, lemon juice, spices. Gelling agent: fruit pectin. Fruit used: 75 g per 100 g.
