Often less known products have qualities unknown to the more famous ones. Thus, the golden onion of Etna surpasses in intensity the pluricited cousin of Tropea or the Sicilian relatives of Giarratana and Partanna. In this version, softened by cane sugar, it maintains a strong character which makes it the ideal companion to numerous specialties with a strong flavour. With a thousand uses, it is almost obvious on a slice of grilled tuna or pork. Noble complement to a gourmet hot dog. It enriches a slice of grilled Ragusano caciocavallo with texture and taste, laying out a metaphorical red carpet for a stellar pairing with a Cerasuolo di Vittoria or a Nero d'Avola from the Eloro DOC. A gustatory celebration of south-eastern Sicily. In simple version, try it on a toasted crouton with the addition of a pinch of fresh habanero pepper.
