Vinification: The harvest takes place manually in the coolest hours of the day. After destemming and a prolonged cold maceration on the skins, the soft and progressive pressing of the grapes is carried out. A slow thermo-controlled alcoholic fermentation follows (approx 12°C). Subsequently, the sparkling process takes place in autoclaves for approximately 2 months using the Charmat method. ORGANOLEPTIC CHARACTERISTICS. Colour: Bright with a very fine perlage. Smell: fine and elegant with hints of typical acacia flowers and orange blossoms varietal notes
