Production area: C.da Santo Spirito, Passopisciaro, Etna.
Soil: volcanic sands; exclusive stones and rocks.
Grapes: 100% Nerello Mascalese
Training system: small tree supported by chestnut poles, plants up to 100 years old.
Vinification: light maceration in the press, soft pressing of the whole bunch and fermentation at controlled temperature in steel with indigenous yeasts.
Production method: refermentation in the bottle (Metodo Classico).
Aging: 20 months of aging on the lees in the bottle. Dosage: Brut
