Vine variety: White, 100% traditional variety.
Winification: soft whole bunch pressing, fermentation for 8/10 days in steel at a controlled temperature. 40% of the total is destined for malolactic fermentation. Sparkling winemaking with the classic method, 9 months in steel "sur lies". 42 months on the yeasts, vintage and undosed product.
Sensory notes: vertical followed by the trepidating savory momentum that brings balance and tension in a brilliant with a very fine perlage. Intense olfactory spectrum, opening notes of cedar and plum accompanied by delicate floral and mineral memories on a background of bread crust. Consistent palate, fresh and harmonious final entry.
