ORGANOLEPTIC PROFILE
It has a colorful appearance. bright straw yellow, animated by a very fine, intense and persistent perlage.
The bouquet embraces notes of yellow flowers (broom, calicanto) and fresh and ripe yellow pulp fruit (banana, mango) with nuanced notes of yeast. On the palate it imposes itself in freshness and dynamism, supported by a very fine and enveloping carbonation, perfectly integrated in the sensation of energy and plasticity transmitted by the long rest on the yeasts, with the aromatic range of floral notes, ripe and crunchy fruit and aromatic herbs to enhance in a long finish with a luminously alpine character.
FOOD COMBINATIONS
The aromatic breadth, the absence of residual sugar but, at the same time, the enveloping tactile sensation make it an extremely versatile bubble , capable of enhancing tasty appetizers and first courses, in particular with seafood and shellfish, as well as preparations of particular consistency in texture (large-sized or tight-fibre fish, white meat) or of strong salinity (blue fish, caviar) or traditional Italian recipes with a greater presence of fats and sauces. To be recommended on fish-based dishes of Asian cuisine, particularly Japanese.
