Manual in 14 kg boxes

VINIFICATION:
Whole bunch pressing with valorisation of only the first pressings, controlled temperature fermentation, refinement of the bases partly in steel and partly in oak barriques

MATURATION:
The cuvée, with the addition of the “liqueur de tirage”, is sent to fermentation.
The bottles were placed in a pile where they remained for approximately 6/7 years to mature on the yeasts

ALCOHOLIC:
12.5% vol

DESCRIPTION:
The cuvée that gives life to our Millesimato represents, more than any other wine of the company, the perfect synthesis of the agronomic path carried out, in over forty years, on Chardonnay clones.
For this wine, so complex both from a technical and sensorial point of view and with an impressive maturation potential, plants with different genetic profiles were selected, cultivated with different training methods, with the aim of obtaining of well-developed native acidity and a correct sugar content, as well as well-characterized olfactory and gustatory profiles.
