Manually in 14 kg boxes
VINIFICATION:
Whole cluster pressing with enhancement of only the first pressings, fermentation at controlled temperature aging of the bases partly in steel partly in oak barriques
MATURATION:
The cuvée , with the addition of the "liqueur de tirage", is sent to the second fermentation.
The bottles were stacked where they remained for about 6/7 years to mature on the lees

The cuvée that gives life to our Millesimato represents more than any other wine of the company the perfect synthesis of the agronomic process carried out, in over forty years, on the clones of Chardonnay.
For this wine so complex both from a technical and sensorial point of view and with an impressive potential for maturation, plants with different genetic profiles have in fact been selected, cultivated with different forms of training, with the aim of obtaining levels of well-developed native acidity and a correct sugar content, as well as well-characterized olfactory and gustatory profiles.
