DESCRIPTION
Banfi was among the seven historic companies that, claiming the Piedmontese roots of the Italian sparkling wine tradition, started the Classic Method Sparkling Wine Project in Piedmont in 1990. In 2008, finally, the Alta Langa DOCG denomination was obtained. Straw yellow colour, fine and very persistent perlage.
Intense and fragrant aroma, characterized by hints of candied citrus peel, yeast and vanilla.
In the mouth it expresses all its elegance and harmony which ends in a fresh and savory finish.
VARIETY
Pinot Noir (70%) and Chardonnay (30%) harvested by hand and coming exclusively from vineyards grown on high hills in Piedmont, in a specific area of the provinces of Cuneo, Asti and Alessandria.
TECHNICAL NOTES
Soil: marly-calcareous soil with a small percentage of clay.
Training system: Guyot
Planting density: 4000 cp/ha.
Yield per hectare: 110 q/ha.
Fermentation: the first at a controlled temperature (13°-14°) in steel vats, the second in the bottle according to the
Classic Method with permanence on the yeasts for at least 30 months.
Alcohol: 12%
Temperature of suggested service: 8-10°C.
Contains sulphites.
