GRAPE PRODUCTION: 90 quintals/ha (DOC specification 150 quintals/ha);
FERMENTATION AND STORAGE: Soft pressing followed by slow fermentation at 15 – 17°C. Disgorgement is carried out after at least 30 months of permanence on the yeasts.
ORGANOLEPTIC NOTES: COLOR: bright straw yellow, with fine and persistent perlage.
BOUQUET: elegant, with fruity notes of golden apple; clearly reminiscent of Chardonnay.
TASTE: very dry, fresh and structured, with good persistence in the finish.
SERVING TEMPERATURE: 10 °C.
Vol.12.5%.
