Russello durum wheat semolina linguine Albacara
Linguine are a type of long pasta made from durum wheat semolina.
The length is the same as spaghetti but, rather than having a cylindrical shape,
they have a flat appearance and belong to the same family as bavette
(flattened spaghetti with a rectangular section, of medium thickness) and trenette
(linguine with an ovoid section); it is a type of pasta that finds its origin in Genoa.
The particular shape of this type of pasta favors its combination with fish-based sauces and condiments.
In Liguria the typical condiment for trenette is pesto.
Produced with ancient Russello wheat flour.
