Russello durum wheat semolina calamarate Albacara
The name calamarata derives, in fact, from the similarity that this pasta shape has with the calamari rings
with which it is seasoned, so much so that when the dish is served on the table it is
difficult to distinguish the pasta from fish.
The term calamarata indicates both a pasta shape (a cross between half paccheri and half sleeves, cylindrical and narrow in shape, smooth and without lines), and a Typical first course of Neapolitan and Campania cuisine based on calamarata, cherry tomatoes and calamari or squid.
Produced with ancient Russello wheat flour.
